Dr. Peng was graduated from UMass, Amherst and got her doctor's degree in Food Science in 2019. Now she is working as an assistant professor at MUST Faculty of Medicine. Her research is focusing on the prevention of metabolic disorders with the assistance of functional foods, as well as the environmental risks for the development of chronic diseases. Dr. Peng teaches several courses regarding to food science, biochemistry, and molecular biochemistry.
Academic Qualification

Ph.D. in Food Science,        University of Massachusetts Amherst, USA M.S. in Food Science,  University of Georgia, USA B.S. in Biotechnology, Northwest A & F University, China

Teaching Area

Courses in Food Science, biochemistry, and scientific research and writing

Research Area

Mainly including two aspects: (i) The preventive mechanisms of bioactive dietary food/components on chronic diseases, including obesity, T2D, and enteritis (ii) The role of environmental contaminants in the development of chronic disorders, specifically environmental causes of obesity and developing effective dietary based strategies to prevent the progression of obesity and T2D
